Diagnosis and Quantification of Losses in the Logistical Management of Storage in the Commercialization of Fishery Products

Abstract

The research was carried out in the commercialization unit of the fishing company of Sancti Spíritus where limitations in storage management were identified. To solve the identified problem, the objective was to implement a procedure for the diagnosis and quantification of losses in storage logistics management. The designed procedure contains a set of phases in which different methods and techniques are developed, such as the Delphi method, checklist, process flow diagram, modal analysis of failures and effects, control charts, histogram and Taguchi's loss function. As results, the following were obtained: the failures occurring inside the cold chamber with their risk priority levels; the temperature variable was determined to be outside the established control parameters; the capacity of the process in the cold chamber was calculated; and economic losses related to inefficiencies in storage were quantified. The research made it possible to detect the main causes that influence the unproductive storage logistics management of the organization, the associated losses and proposed measures for the solution of the problems identified.

(UNISS-2015); Professor since 2014 of the Department of Industrial Engineering belonging to the Faculty of Technical and Business Sciences. Since 2016 Head of the Industrial Engineering Department. He has advised 6 Diploma Works in Industrial Engineering and participated in several Defense Courts of Diploma Works. He has completed postgraduate studies 2015- 2016 Packaging Development Management Stuttgart, Germany and (2019) The didactics of professional training in universities, University of Guanajuato, Mexico. Taught course on Organization of work and wages. 1 article published in a scientific journal. Participated in 6 international scientific events. Leader of the Business Project since 2018: aquaculture production and industrial development of Sancti Spíritus.

He teaches the subjects of Plant Distribution and Integrating Project of the Industrial Engineering career. He has participated in diploma thesis pre-defense workshops, consultancies and lectures. National University of Córdoba (Córdoba, Argentina 2017) and Total Quality Management, ISO 9001, 14001, 22000, 27000 and 6 sigmas. NationalInstitute for micro, small, mediumenterprises. (Hyderabad, India 2017). Production Director at the Sancti Spíritus Fishing Company (PESCASPIR) and assistant professor of the industrial engineering career at the University of Sancti Spíritus "José Martí Pérez" (UNISS). More than 20 postgraduate courses and 20 undergraduate semesters in the disciplines of Quality and Human Resources. Industrial Engineer (UNISS - 2019). Instructor Professor of the Department of Industrial Engineering, Faculty of Technical and Business Sciences - University of Sancti Spíritus "José Martí Pérez". With extensive experience in agronomy, he teaches the subject of Structural Botany in the career of Agronomy at the Faculty of Natural Sciences of the University of Sancti Spíritus "José Martí Pérez".
